It seems to be one of the most popular days in February (even more than Valentine's day!), Pancake day! For those of use that choose a gluten free diet, a low carbohydrate diet or sugar free diet, pancake day can be a bit limited! However we have got an alternative pancake recipe, ideal for those who struggle to find a recipe to suit them. We have tried a few different Coconut pancake recipes over the last few weeks, and we found although they were good we couldn't really find the right balance.. until we made our own.
All measurements here are in cup size (its awkward converting liquids and flour to grams/ml's) so your best bet would be to get a cheap measuring cup that gives you exact cup measurements on it. These are ingredients are for one (just times by however many people you are making for):
Simply mix all the ingredients with a whisk. You wont end up with a runny batter like normal pancakes. Pre-heat pan with coconut oil (Medium-High heat). Spoon half the mixture in. Now you don't at this point want them to cover the whole pan. I wouldn't try and spread it out either yet at this point. Here is the key point. It takes longer than normal pancakes (3-4 minutes each side). Once down flip over, then you can push the cooked part with the spatula to flatten out the pancake increasing its size, so it has more normal pancake look about it. Leave for about a further 2-4 minutes and its done. You can make either one or two from the mix, depending which size you prefer. One will need a bit longer. Choose whatever you want to serve with (Greek yogurt, blueberries & Pumpkin seeds works well). You might have to give a few goes to get it right for you to begin as its different from making normal pancakes. Give it a go and let us know how you get on.
